Licorice, oftewel zoethout, is een kruidachtige vaste plant, die voorkomt in verschillende delen van de wereld, waaronder Zuid-Rusland, Middellandse Zee gebied, en delen van Azië. Het wordt al meerdere eeuwen toegepast als krachtig kruid. Het deel van de zoethout dat wordt gebruikt als smaakstof en als traditioneel kruid is de wortel. Zoethoutwortel bevat specifieke chemische bestanddelen die het de zoete, kenmerkende smaak geven.
