Kombu (Kelp) is an excellent source of vitamins and minerals: Kelp has been shown to contain 46 minerals, 16 amino acids (the building blocks of protein) and 11 different vitamins. While nori is what the Japanese call it, this versatile sea vegetable is also known as Sleabhancán here in Ireland, laver in the British Isles, gim or kim in Korea, and zicai in China.

Himanthalia elongate is primarily used as a sea vegetable. It is normally dried and marinated or pickled in jars to preserve its shelf-life. The long ribbon like fronds of sea spaghetti, is native to the Atlantic. They reach their peak of taste and tenderness in the middle of spring.
