Quinoa (pronounced ' kien-wah ') is an ancient crop that is grown in South America and thousands of years ago all was eaten by the Maya. It literally means ' super grain '. The seeds of the plant resemble grains, but are gluten-free and have a fine, slightly nutty flavor.

The white quinoa is the most common quinoa, but there is also red and black quinoa. Quinoa is high in protein, unsaturated fatty acids, dietary fiber, essential amino acids (which the body does not make), vitamin B2, vitamin E and is chock full of minerals such as iron, copper and magnesium.

Rinse the quinoa in a fine mesh screen very well and let it drain. Boil 1 part quinoa with 2 parts water in 15 minutes (or a little longer for porridge or pudding). Quinoa is delicious in a salad, soup or as lunch or breakfast dish. You can also process in cakes and pies and the seeds can also be fermented. This results in a drink called ' chicha '.
