The lucuma is an exotic fruit that grows on the highlands of the Andes, in Chile and Ecuador. Lucuma trees can live up to 500 years and still bear hundreds of fruits. The fruit is about the size of an apple and has a green to yellow-brown skin. The flesh resembles that of a pumpkin.
The raw, organic lucuma powder has a very low sugar content and therefore a low calorific value. It offers many natural vitamins, primarily the B vitamins and a large amount of the antioxidant beta-carotene and minerals such as iron, calcium, potassium and phosphorus. Because of its sweet taste, it is often used as a sweetener and is therefore called the gold of the Incas. Just as we have vanilla ice cream, the Peruvians have their own favorite: lucuma ice cream!
