Teff is a gluten-free grain tht has traditionally been used in Ethiopian and Eritrean cuisine to make injera, a sour fermented flatbread. It is a healthy and versatile ingredient for many gluten-free products. Teff can be eaten whole and steamed, boiled, added to oatmeal or baked as a side dish or main course. It can also be ground into flour and used to make gluten-free waffles, cookies, bread and crackers.
