Sprouts are the 1st stage of growing a plant from the seed. These sprouts are usually white or light in color. This is because the germs do not yet contain chlorophyll. It depends on the type of sprouts grow what the color becomes. Sprouts of sango, beetroot and red cabbage, for example, color white to pale pink, while sprouts of broccoli and leek, for example, turn white to light green. Sprouts do not yet contain leaves, or at most the first two leaves, also known as the 'cotyledon'. Sprouts are usually grown from beans, herbs and plants of the Allium family. Examples include leek, chives, mountain garlic, St. John's onion, shallot, spring onion and onion.
Greens are also known as micro vegetables. These are sprouts that have progressed a phase further, so that several green leaves begin to form and the stems are also greener when sprouting. These leaves contain more chlorophyll than is the case with sprouts, in which there is no or very little chlorophyll. Greens are almost always grown from different types of seeds (such as sunflower and pumpkin seeds) and some types of beans (such as peas). Other plant varieties that have been freshly sprouted can of course also be grown into greens or micro vegetables.
