It is a healthy and versatile ingredient for many gluten-free products. Teff can be eaten whole and steamed, boiled, added to oatmeal or baked as a side dish or main course. It can also be ground into flour and used to make gluten-free waffles, cookies, bread and crackers.

Brown teff has a rich and robust, earthy, hazelnutty flavour. Ivory teff is more mild, with a slightly sweet chestnut-like flavour. Both types are exactly the same nutritionally.
