It is wildcrafted and harvested by hand and then sun-dried. No machinery, basins, pools, or mass production is used.

Because Sea Moss is a natural product, its quality depends on many factors, such as weather conditions, season, wave action, and manual labor.

The final product may vary in color, size, moisture content, and binding capacity.

Quality

The natural color of Sea Moss is dark red. During the drying process, the color lightens, with some areas bleaching faster than others. This can result in dark spots in the final product. The final result varies per batch.

Sea Moss naturally has a very high salt content. During the drying process, natural salts are released from the Sea Moss. This salt is visible as a white salt crystal layer on the seaweed and provides a natural preservation. The salt disappears when rinsed. The amount of salt crystals on the Sea Moss varies per batch.

Sea Moss thrives in the ocean with strong currents and the right temperature. This makes it firmer and produces more carrageenan. This is a natural and healthy carrageenan. If the product is rich in carrageenan, it may require a longer soaking time than indicated. 

Preparing Sea Moss

Depending on its intended use, Sea moss can absorb 3 to 5.5 times its own volume of water during soaking.

In a Dutch climate, the soaking time is at least 17 hours.

If you heat the water to body temperature (37 degrees Celsius), it will be ready in 2.5 hours.

Do not heat the water above 40-42 degrees Celsius, otherwise the seaweed will decompose and lose much of its thickening power.

Thanks to its high binding capacity, it can then absorb many more times the amount of water in the blender. This makes it ideal for thick pastes, such as those used in cakes, ice cream, and pudding. By adding more water to the paste, you can also create a thinner consistency, suitable for smoothies, soups, and sauces. Sea moss requires a good, powerful blender to achieve a firm, smooth, and consistent consistency. If you have a less powerful blender, you can add a little more water, create a less consistent consistency, or use it whole in your recipes.

A great trick is to add lemon juice at the end of your soak. This gives it a wonderfully fresh taste and aroma.

ApplicationSea Moss is an ideal binding agent for soups, smoothies, shakes, lassies. It can also be used as a gelling agent in raw cakes and pastries or can be added to salads. Rinse the Sea Moss well with water and let it soak in lukewarm water (below 40 degrees Celsius) for about 4-24 hours. You can then make a gel/gelling agent by adding it to the blender with water to create a smooth gel, let it rest for 1 hour.
