
Lycopene is a natural pigment, to which the tomatoes owe their red color. If a tomato is a flame red, it contains a lot of lycopene. The redder the tomato, the more lycopene. Eating tomatoes increases the production of collagen, a protein that keeps the skin supple. Tomatoes also protect you against sunburn and make your skin look younger.
5 medium sized tomatoes
1 red bell pepper (Paprika)
Juice of 1 lime or lemon
1 cup soaked sundried tomatoes
1 tbsp Nama Shoyu
1 tbsp Tomaatje Toe
1 tsp Himalayan Salt (or Celtic Seasalt)
½ tsp black pepper
1 date
Fresh Herbs (basil, coriander, parsley, etc)
1 cup pine nuts
1 cup water
½ zucchini
Tip: To make it extra creamy use 1 tbsp coconut cream.
Blend all ingredients, except the zucchini, in a blender to a creamy soup. If necessary, add warm water to get the desired thickness. Make strips of zucchini with the julienne cutter and stir them in the soup.
