Cucumber Raita

Looking for the perfect way to cool down on a hot summer day? Look no further! This refreshing cucumber raita with ground coriander is just what you need. Quick, simple, and super cooling – it’s the perfect side for any summer meal or a light, tasty snack on its own.

Ingredients:

  • 250 ml full-fat yogurt (Greek or plant-based alternative)
  • 1/2 cucumber, grated or finely chopped
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cumin (optional, for extra depth)
  • Pinch of black pepper
  • Pinch of salt
  • Fresh coriander (optional, for garnish)
  • A few mint leaves (optional, for extra freshness)

Instructions:

  1. Grate or finely chop the cucumber. Squeeze out excess moisture if you prefer a thicker raita.
  2. In a bowl, combine the cucumber with the yogurt.
  3. Add ground coriander, salt, pepper, and cumin (if using).
  4. Mix well and adjust seasoning to taste.
  5. Chill in the fridge for at least 10 minutes.
  6. Garnish with fresh coriander or mint leaves if desired.
